Steve's Savoury Pull-Apart Bread

Simple but effective bread dough with savoury spices, cheese, meat... Whatever takes your fancy really. Can be adapted with sweet fillings too. Looks great and great for sharing.

Instructions

Mix milk, sugar and yeast, in stand mixer bowl and rest for 10 mins.

Add egg, flour and improver and mix for 2 mins. Knead with dough hook for a further 5 - 8 minutes on speed 2. The dough should be smooth and come away from the bowl cleanly when ready.

Place dough in warm place to prove for 1 hour (double in size).

Place dough on floured surface and knock down, gently roll to about 1cm thick.

Sprinkle dough with filling ingredients and cut into pieces about 5 x 15cm, roll each piece and place spiral-up in a greased baking tray. Fill tray so pieces barely touch.

Allow to prove again in 30C oven for 1 hour. Pieces should expand and touch each other snuggly.

Wash with milk and Bake at 170C for 30 – 35 mins (until tops are golden brown)

Try it with Vegemite.

Ingredients

Bread

  • 2 cups plain flour

  • 1 Egg

  • 1 tsp Bread Improver

  • 1 tsp Yeast

  • 1 tsp Sugar

  • ½ tsp salt

  • ¾ cup warm Milk and some milk to wash

Filling

  • ¼ cup Ricotta crumbled

  • ¼ cup Parmesan grated

  • ¼ cup chopped olives

  • ¼ cup finely chopped Ham or smoked Speck (optional)

  • 1 tsp Italian herbs
