Steve's Pork and Pineapple Curry

This is a mash of many curry recipes. The pineapple and the stock make it, don't be afraid to use the best stock, and include the pineapple juice from the can. Use quality pork and add the pork when the sauce is ready. Do not over cook!
Steve's Pork and Pineapple Curry


Fry off onion until soft.

Add curry paste and fry until fragrant.

Add pork and brown.

Add rest of ingredients and simmer for 10 – 15 mins (until pork is cooked)

Serve with rice.


  • 400g Pork pieces (stir fry size or chunks)

  • 1 Onion (Diced)

  • 2 TBS Massaman or Red Curry

  • 1 can Coconut Milk

  • 1 Chicken or Veg Stock cube

  • 1 TBS Fish Sauce

  • 1 TBS grated Palm sugar

  • 1 can Pineapple chunks (230g)

  • 1 tsp coriander (dried)
