Steve's Pork and Pineapple Curry
Smashing Chinese, Thai and Indian flavours, probably the simplest curry to make. Try scratch building with spices or use a prepared jar. Adjust amount of curry to your liking.
Instructions
Fry off onion until soft
Add curry paste and fry until fragrant
Add pork and brown.
Add rest of ingredients and simmer for 10 – 15 mins (until pork is cooked)
Serve with rice.
Ingredients
400g Pork pieces (stir fry size or chunks)
1 Onion (Diced)
2 TBS Massaman or Red Curry
1 can Coconut Milk
1 Chicken or Veg Stock cube
1 TBS Fish Sauce
1 TBS grated Palm sugar
1 can Pineapple chunks (230g)
1 tsp coriander (dried)
