Steve's Pão de Queijo (Brazilian Cheese Bread)
A Brazilian staple. Cheesy balls of goodness, usually made fresh for breakfast, but good any time! Best served warm. Try mixing in different cheeses. Must be made with tapioca flour.
Preheat oven to 200C.
Combine milk, water, butter, salt in a saucepan and bring to low boil, cool for 5 minutes.
Pour liquid into mixer with flour and paddle blade.
Mix on low for 30 seconds, slowly add eggs, mix for 1 minute (until combined).
Slowly add cheese and mix until just combined (3 Minutes) Do not over-mix.
Shape mix into golf ball sized balls either by hand or with 2 spoons and place on baking paper or small muffin tray.
Bake (no fan) at 200C for 30 minutes or until puffed and golden brown.
Serve warm with Caipirinha (Look it up!)
4 cups (500g) Tapioca flour (Must be Tapioca!)
½ cup milk
¼ cup water
60g unsalted Butter
200g Cottage Cheese (or Ricotta, Feta, Mozzarella)
50g Grated Parmesan Cheese
½ tsp salt
