Steve's Gammon Ham Glaze
Great for xmas or any time of the year, this recipe starts with a cured ham shoulder that is uncooked.
Place ham ingredients in water and bring to boil. Simmer for 60 mins
Place sauce ingredients in saucepan, bring to boil.
Reduce sauce to thicken
Remove ham from water and place on a baking tray.
Glaze the ham with glaze mixture.
Cook ham at 200C 25 mins, glazing twice more during cooking.
2kg Cured Gammon Ham (skin removed and criss-cross cut the fat)
2 coarsely chopped onions
2 coarsely chopped carrots
2 sticks of celery coarsely chopped
12 allspice pimentos
12 pepper corns
Sprig of thyme
4 bay leaves
1 TBS Raw Sugar
2 TBS Blackcurrant Cordial
1 TBS Minced Ginger
1 TBS Marmalade (or similar)
1 tsp Dijon Mustard
½ tsp Cinnamon
1 cup water
