Steve's Fish Pie
Olde worlde fish pie from the old country, simple, honest, tasty grub! Plenty of fortifying calories to ward off those long winter nights.
Boil potatoes for mashing.
Fry off onions, carrot, celery in oil and butter.
Add spinach to steamer over the boiling potatoes (eggs can be added to boil for 8 minutes)
Take off heat and add cream cheese and milk slowly to the veg, add mustard, corn flour and lemon juice, stir until combined.
Cool, peel and chop eggs.
Pour mix into an oven proof dish, add raw fish, spinach and eggs. Gently stir.
Top with mashed potato.
Sprinkle with cheese.
Bake at 200C for 20 mins (Until potato and cheese top is golden)
Serve with parsley to garnish.
500g Fish in 2cm pieces (or other seafood)
500g potatoes, peeled and diced into cubes
1 Onion, finely chopped
1 Carrot, finely chopped
1 stick Celery, finely chopped
2 boiled eggs, chopped
100 g fresh spinach
50ml olive oil
200 ml Milk
150g Cream Cheese
100 g Cheddar Cheese
30ml lemon juice
1 TBS Corn flour
1 teaspoon English mustard
Flat leaf parsley, finely chopped
