Steve's Chicken Mushroom Zucchini Pasta Sauce
Lots of ingredients in this one so plan ahead, surprisingly simple to make, and deliciously umami!
Fry off onion in oil.
Add Chicken and brown.
Add Celery, stock cube and garlic and stir through over high heat.
Deglaze with wine, add mushrooms.
Add Tomatoes, paste and all herbs.
Stir well add 250ml water and bring to boil.
Reduce to simmer and add some water if looking too dry and thick.
Simmer for 1 hour.
Add Capsicum and Zucchini 10 minutes before serving.
Serve with Pasta of choice and plenty of Parmesan cheese.
500g minced Chicken
200g Onions and/or Spring Onions chopped
200g sliced Mushrooms
200g sliced Baby Zucchini
100g Sliced Baby Capsicum
150ml Red Wine
3 TBS Olive Oil
1 can diced or crushed Tomatoes (400g)
1 small can Tomato Paste (120g)
1 Stick Celery, finely chopped
3 cloves Garlic
1 Beef Stock Cube
½ tsp White Pepper
½ tsp Celery Salt
½ tsp Dried Tarragon
½ tsp Dried Oregano
½ tsp Dried Basil
½ tsp Dried Thyme
1 Bay Leaf
250ml Water (plus)
