Steve's Cheesy Kale and Potato Soup
Combining all of your favourite foods: Cheese and potato! Oh and some kale too because health. This soup is actually delicious, make sure you top with Parmesan and fried onion for the full experience!
Slice and sauté onions in butter until brown and caramelised.
Add stock, potatoes and sweet potatoes, bring to boil and simmer until potatoes are soft.
Add kale and blitz with blender or stick.
Return to low heat and add cream cheese and gouda, stir until melted.
Season to taste and serve with parmesan and fried onions on top.
400g Potato (cubed)
300g Onions (diced)
150g Sweet Potato (cubed)
100g Kale (chopped, with stalks)
1L Chicken (or Veg) stock
100g Cream Cheese
100g Grated Gouda
Fried Onions (for garnish)
Salt and pepper
