Steve’s Pickled Onions
Peeling can be hard work but the rewards are excellent! Try changing up the ingredients until you hit your own blend. About 40 years ago I knew an old bloke in Broken Hill who made Pickled Onions and gave the profits to charity. This one’s for Wally.
Easy Peel Onions: chop off ends, cover with boiling water for 2 minutes, wash with cold water and peel.
Toss peeled onions with salt and let sit at room temp for 4 – 12 hours.
Rinse onions and set aside.
Combine all other ingredients and bring to a boil to dissolve sugar.
Firmly pack sterile jars with onions leaving 3cm head room..
Cover with boiling liquid (leaving 2cm head space, can be topped with boiling water) and cap.
Store for 6 weeks before tasting.
1kg small onions
2 TBS salt
3 cups Malt Vinegar
4 TBS Honey
½ cup Brown Sugar
1 tsp whole coriander seeds
1 tsp mustard seeds
½ tsp whole black peppercorns
2 Allspice berries
2 whole Cloves
2 Bay leaves
