Steve’s Lime and Cucamelon Jam
Cucamelon is a Mexican fruit, it's citrusy, tangy and cucumbery. This is a sweet and sour jam, ideally suited to sandwiches or cheeses.
Combine all except sugar and pectin in blender and blend to marmalade consistency.
*Measure volume and add equal amount of sugar and the pectin, put into saucepan.
Boil for 2-3 minutes.
Bottle in sterile jars.
1 Lime, (unpeeled, cut in chunks and seeded)
¼ cup Lime Juice
1/8 cup Apple Cider vinegar
24 Cucamelons (or 1 ½ cups Cucumber)
Pinch of salt
½ package powdered pectin (Jamsetta)
1 ½ cups Sugar*
