Steve’s Bourbon and Coke Ribs
Marination and slow cook is the key here. Can be wrapped in foil after smoking to maintain moisture, baste regularly.
Combine Bourbon, coke, soy, lime and pepper.
Marinate ribs and refrigerate ribs for 4 – 24 hours submerged (curve-down) in mixture.
Preheat oven*** to 180C (fan).
Place ribs (curve-up), on wire rack over a shallow pan in oven, baste with mixture (catching mixture in the pan).
Cook/smoke at 180C for 30 minutes.
Reduce heat to 100C and place ribs into the mix in the pan (curve-down), baste and cook for 3 hours covered in foil..
Turn Ribs over (curve-up) and thickly baste with BBQ sauce of choice, cook for another 30 minutes.
* The more you spend on Bourbon the more taste you will get!
** I like Stubb’s Sticky Sweet Legendary BBQ Sauce.
*** Can be cooked in Smoker with Hickory chips for the first 30 minutes only (do not smoke for the whole time)
2 Racks of Pork Ribs (membrane removed, can be cut to fit into pan)
1 can of Coke (375ml)
3 shots of Bourbon* (90ml)
1 TBS Soy Sauce
Juice of 1 Lime
½ tsp Liquid Smoke (optional)
BBQ Sauce of choice**
