Steve’s BBQ Baby Octopus

A very versatile dish with plenty of scope for more or less chili, sugar, salt and spices. Do marinate thoroughly, do not over cook!

Instructions

Mix all ingredients except Kecap Manis

Marinate for 2 hours.

Remove octopus from marinade and grill or fry in a hot pan or BBQ for no more than it takes to curl tentacles and heat body (3 mins).

Add Kecap Manis to marinade and reduce to a sauce.

Ingredients

  • 350g Cleaned Baby octopus (also good for calamari or prawns)

  • 1 glass dry White Wine

  • 2 TBS EV Olive Oil

  • 1 TBS Garlic paste

  • 1 TBS Ginger paste

  • 1 TBS Apple Cider Vinegar

  • 1 tsp Smoked Paprika

  • 1 tsp Sweet Paprika

  • 1 tsp Sugar

  • Salt and pepper

  • Chilli (optional)

  • 2 TBS Kecap Manis
